You start with freshly roasted coffee beans. After roasting,
coffee needs a day or two to degas. This allows the flavors to fully
develop. But then, like a fine pastry, it is meant to be consumed
and enjoyed. Much of the coffee you can buy today has been sitting
on a shelf or in a warehouse for too long. There is little aroma,
the finer details of flavor are lost, and it is more likely to be
bitter. You deserve better than that.
We start with quality beans from around the world. Carefully
roasted to bring out the delicate characteristics of each origin.
